Tomato Soup

1 tbs butter
1tbs olive oil
3 medium onions, diced
½ cup all-purpose flour
4 28-ounce cans diced tomatoes
1 ¼ cups chicken broth
¼ cup sugar
1 tablespoon kosher salt
1 cup celery
¾ teaspoon pepper
¾ cup half-and-half
2 tablespoons honey

Directions

In a large pot, melt the butter and olive oil over medium-low heat. Add onions and cook gently, stirring occasionally, until translucent.

Add flour and stir for approximately 3 min.

Add the tomatoes with juices, chicken broth, sugar, salt, celery, salt and pepper. Turn heat to medium and bring to a slow boil, then reduce heat to low. Simmer for 30 minutes, making sure to scraping the bottom of the pot frequently.

Remove from heat and add half and half and homey. Using a using a hand blender, purée the soup until smooth. If you don’t have a hand mixer you can allow to cool and purée in batches in a blender. Return to medium heat just until heated through. Serve hot with bread or grilled cheese sandwiches. Enjoy! 😋

2. Faux or natural stems are the easiest way to transition between seasons and they add unbelievable texture! I love pampas grass!

3. I always like to add a lidded bowls on my nightstand to keep items like rings and chapstick from falling off my nightstand.
